Whole Wheat Pancake Recipe

Hello all,

 I just thought I would share with you all a Whole Wheat Pancake recipe that my family loves. My kids like them better than regular pancakes. Though the recipe is not perfectly clean, it does provide something for those of us who love pncakes and can no longer eat them. I would also love to get feedback from someone who knows much better than I just how good or bad they are for incorporating into one's diet.

Ingredients:
2 cups Whole Wheat Flour
1/2 cup Wheat Germ
2 tsp Baking Powder
1 tsp Salt
1 tbs Brown Sugar

2.5-3 cups skim Milk
2 Eggs
2 tbs Oil (I use Canola or Olive)

Instructions:

  1. Mix all dry ingredients together
  2. Beat Milk and Eggs
  3. Combine the Milk/Eggs with the dry ingredients
    4)Stir in the Oil last
  4. Cook on medium heat

Notes:

  1. I find that using really good Whole Wheat flour from the health food store makes a signifigant difference in taste and texture.
  2. These take longer than regular pancakes to cook.

I don’t think that the pancakes themselves are too bad(moderate GI), it’s the syrup that goes on em!

On my roadtrip to RI this past weekend I had blueberry pancakes three mornings in a row, once combined with eggs benedict. It was gloooooorious!
