Anyone know where whole wheat flour falls on the glycemic index? Also, does baking change this figure?

I think it depends on how it is processed into food, like how you make it into bread or pancakes, etc. According to www.mendosa.com/gilists.htm, whole wheat bread has about the same GI as white bread. I think you are better off eating white pasta (al dente, of course).
