I think a current NFL player would be pretty interesting, and a little out of the normal scope. For how much people hype the genetic gifts of pro athletes on these forums, it could be pretty interesting to talk training and nutrition with one.

Then he stopped competing in Met-Rx but still compete in various strongman across Eastern Europe. I would also enjoy at least one article about a Ukrainian athlete.
