When to Increase Weight?

I recently went from strength training three days a week to running two of those days and lifting just one day a week. I’m not a gym rat. I just had my 50th birthday and I’m just trying to stay healthy and in decent shape.
My question is this. how to tell when it’s time to up in weight on an exercise. Before when I lifted three times a week if I did an exercise for 12 reps all three sets for three weeks in a row I would increase the weight.
Now only lifting once a week I’m wondering what factors I should look for before increasing weight.
