Weight Loss Plateau, Now What

I went down from 260lbs to 245, then back up to 246lbs as of this weekend. Specifically, 246lb measurement was taken on day 50. I know this is not an outlier as I took multiple measurements throughout the day, confirming this is the correct weight. I am already eating 2500kcals/day, but I am reluctant to go lower. When I was 215lbs and dropped to 185, I ate 2000kcals/day and lost the weight in about 6 months. I was not a strong and not as active as I am today, hence why I don’t think it would be a wise move to go down to 2000kcal just yet.

My training looks like:
Day 1: Strength
Day 2: HIIT
Day 3: Strength
Day 4: HIIT

usually over a 7 to 10 day period depending on my energy levels. What is the best way to break through a plateau without cutting calories further?
