Simple Diet for Athletes Question

Hi not sure if this is the right place to post this but couldn’t think of anywhere else! In the article for The Simple Diet for Athletes, there are guidelines and ideas for meals for breakfast and dinner, i know this sounds like i can’t think for myself, but what sort of think should i be eating for lunch along with this diet?

If you make enough at dinner to have some leftover, you can use that for lunch the next day
