I do 8 reps per set and typically lift a heavy weight for me.
Should I be doing more sets?

3 sets of 8 can work pretty well for the first six months or even a year, but eventually your body gets used to it. Once it stops working you�??ll need to start doing things differently, so learn as much about lifting as you can before you get to that point.

Yeah, just my diet is slowing it down slightly.
Working on that though.
Most programmes work around 30 reps (3 x 10, 5 x 5 8 x 3) etc etc so 3 x 8 works
Is your total weight you are lifting progressing.
Depending on your overall programme you could do 3 x 8, then try for a 2 x 8 1 x 9
If you dont try to improve your body will get used to it very quickly

Than what you’re doing is fine.
Add more sets when your progress begins to slow.
