So what I have ascertained from much reading on this site is that one ought to consume 1.5-2g of Protein for every pound of personal weight. Now…is this weight including the gross amount or the amount minus what fat weight I happen to be carrying. To be real and honest I am at 320 and consuming nearly 600g of protein seems a bit much if not too much.
In your case, I’d base it on lean body mass.

You should never eat to support fat mass. Always use LBM, or at least figure on what you SHOULD weigh.
