One of my favorites is a sort of creamy spinach variation.
Saute half a finely chopped onion in oil of choice, add one clove minced garlic. When onions go clear add two bags frozen spinach. No additional water. Once spinach is thawed/hot add salt to taste, dash of pepper, and about 1/2 cup cream cheese. That's it.
I do a big batch and this is so tasty added to other things. Eggs especially.
