I sit at an office desk all day and work out about an hour a day 3-4 days a week. Mostly weights. Been doing some German volume training. This is a lot of time at a desk especially with school at nights. Should I stay away from starches and fruit completely? Any good diet resources for this kind of lifestyle?

You sound super inactive... lower carb (around 100g/day), moderate fat, high protein. Pounds and pounds of veggies.
