Looks damn tasty! Always looking for ways to jazz up my eggs!
One low carb one I used to do last year as a pre bed snack was:
Eggs
Peanut butter
Cinnamon
Splenda
Small amount of milk
Whizzed up in a blender and then scrambled using the microwave - to a consistency somewhere between oatmeal and scrambled eggs.
It tasted so damn good that a girl in my flat last year asked me to make her up a batch!
