I am trying to gain weight and I recently gained 15 pounds going from 110-125. I was getting around 2500-3000 calories per day, and I was wondering if it would be better for me to jump up to 4000 calories per day or start eating between 3000-3500.
You should totally still be gaining weight at 125 and 3000 calories.
Add another 500 calories if you feel you’re stalling.

Yup. If 3000 is enough to maintain current weight then 3500 will give you a calorie surplus.
Also don’t worry too much about being stuck for a “couple of weeks”. Most of us grow in spurts - stay around the same weight for about two weeks, then grow 2-3 pounds in a couple of days.
