I was wondering if anyone knows if non-fat milk has whey protein in it. I know whole milk’s protein is 17 percent whey, but I don’t know if the whey is taken out when they take out the cream. I think it is taken out with the cream, otherwise it would be easy to make whey concentrate with zero percent fat in it. This is only a theory though. Any thoughts?
The whey is a byproduct of the cheese making process, not in the process of making cream.
milk contains casein and whey proteins. 20% of that protein is comprised of whey. So out of a cup of milk (9g of protein), about 2g are whey.
