Cherry-Vanilla Grow! Muffins:
(this is for batch made with water, milk will change profile slightly, and cho adjusted for fiber already)
1.5 cup Oat Bran
1 cup flax meal
1/2 cup whole wheat flour
1.5 tablespoons baking powder
1 teaspoon salt
1 teaspoon cinnamon
7 scoops Grow!
1/2 cup walnuts
1 cup fresh or frozed cherries, rough chopped (if using frozen berries, do NOT thaw!)
1 teaspoon vanilla
1-1.5 cups water or milk
Blend dry ingredients thoroughly in a large bowl. Make a well in center add eggs, vanilla, and 1 cup of liquid.
Give the eggs/liquid a whisk with a fork, just enough to break up the yolks, then stir into dry with a wooden spoon, it will be immediately apparent if you need a little more water/milk. Stir in cherries.
Spray a muffin pan with cooking spray, don't use paper muffin cups as they will stick.
Bake at 375 for 20 minutes. They will generally not darken much on top, just a light gold, mostly around the edges so don't overcook.
Eat! They will be sweet, moist, fragrant, and delicious.
You can change the fruit/Grow! flavor for myriad taste sensations, just don't thaw frozen fruit/berries prior to use.
