Just used Berardi's quick wine and garlic marinade from his eBook yesterday, not bad at all. Anyone have any other simple and tasty marinades for meats, especially those that work for more than just beef?
I use a terriyaki and soy sauce on my salmon and tuna. Homemade tartar sauce on other fish.
For steak, worstershire sauce and this stuff called montreal steak seasoning. I think its by mccormick.
A quick marinade I often use:
apple cider vinegar
crushed red pepper
clove or 2 of crushed garlic
salt and pepper
Another marinade I like to use:
a light beer
and a jalepeno sliced
If you're really in a rush you can just put chicken in a bowl with italian dressing.
