Maintenence to cut\Calorie jumping

I plan on going 2 weeks maintenence followed by 2 weeks cutting for about the next 8 weeks. My question is, can i make 500 calorie jumps? 3500,3000,3500. Or should i add or subtract by 250 per week? EX Week 1 3250, Week 2 3500 Week 3 3250 Week 4 3000.
Also how many calories should i add to my diet when i train 2x’s? EX lifting and BJJ? Just looking for more info on how you guys work your short cycles. THanx
