But when I’ve been in the Southern US and ordered mac and cheese as one of my sides at a BBQ joint, I always am disappointed. But I’ve only been to 2-3 BBQ joints.

I things a bit hot, so what I’ll do is fry up my ground beef with some (okay, a LOT) of Cajun spice from Costco… Then when I have the Mac & Cheese ready, I dump in the lean ground beef for my kids and the cajun stuff for me. Top with Salsa and it’s to die for.
I’m not a huge fan of the Kraft box stuff, as I like to make my own with low-fat shredded cheddar (again, I prefer using OLD cheddar over medium, as the OLD gives you more taste).

you name it, its the perfect base for making a meal that only requires 1 pan…
