Let's Talk Crock Pots

I got a HUGE crock pot as a wedding gift back in June. For the past couple of weeks as my free time has been at a minimum it has become the greatest weapon in my nutrition arsenal.

Here are a couple of my favorite recent recipes.

2 bean chicken chili

1.5lb of chicken thighs, cut into strips
1 jar of trader joes garlic salsa
1 large white onion, chopped
1 can white kidney beans, drained
1 can red kidney beans, drained
2tbs tomato paste
2 large jalapenos, diced
1qt chicken stock(mine was home made, but any quality stock will do)

I don’t really measure spices, but lots of garlic powder, cumin, crushed black pepper, cayenne, chili flakes and dried cilantro.

combine everything, cook on high for 4 hours

pot roast w/ sweet potatoes

4lb roast
4 medium sweet potatoes, cut into 1/4’s
1 large red onion, cut into 1/4’s
1 cup beef broth
large pinch of sea salt
crushed black pepper
onion flakes
garlic powder
1tbs of olive oil

rub the roast with the salt, crushed pepper and garlic powder
and then brow it on all sides in a skillet

lay the veggies on the bottom of the crock in a single layer, place the roast on top, pour the stock over the meat and sprinkle the whole thing liberally with dried onion flakes.

cook on low for 12 hours or until the meat looks like it’s about to fall apart.

Right now I’ve got curried chicken and mixed vegetables cooking, I’ll post that one if it turns out good.

my favorite is the italian chicken one.

I was going to go for pulled pork today for my first time with the Crockpot but the store didn’t have the damn shoulder. I’m still pissed about it.

I did a chuck roast in the crock pot today. Started it this morning and it cooked until I got home.

crock pots are great.

salt and pepper

I do this pretty much every week. I like make little slices in the meat and push some whole garlic cloves in there. I also will just use a frozen package of veggie mix instead of cutting stuff up.
