Regarding insulin sensitivity and food, fat, and particularly saturated fat does reduce insulin sensitivity after a meal, BUT it also slows down the digestion of the carbs that are eaten with it, so it can give you a more stable blood sugar to eat saturated fat with carbs. Its a trade off.
Also by the way, coconut oil has a high percentage of short and medium length saturated fatty acids. These tend to go straight to the liver rather than into the bloodstream after eating them so they don’t have the same effect on insulin, though they will stimulate the liver to release glucose.
