it is especially the sparring to progress that interests me and if we can fight it would be a plus too

Not sure how much benefit Thailand will be to your grappling. If your striking is a weak point and grappling is a strong point, I could maybe see the benefit. Why not Jackson-Wink or ATT in Coconut Creek?

I do not know the answer to that. Depending on where you are coming from, it might be cheaper to go to Thailand vs the US.
