I need to gain a few pounds & have been eating gluten free for several years. I was wondering if anyone had any different meal suggestions? Rice, potatoes, or corn tortillas with every meal is getting old. Should I be worried about the amount of corn/products that I'm eating? Thanks for any help you can offer.

Add in some chopped green onions, paprika, salt and pepper.
Squeeze some lemon juice on top.
