Gluten Free Mass Plan

I need to gain a few pounds & have been eating gluten free for several years. I was wondering if anyone had any different meal suggestions? Rice, potatoes, or corn tortillas with every meal is getting old. Should I be worried about the amount of corn/products that I’m eating? Thanks for any help you can offer.

Gluten-Free Grains: amaranth, buckwheat, garbanzo bean/chickpea, hominy/grits, millet, quinoa

GF Pasta’s (made from): rice, quinoa, wild rice and other GF grains
Cold cereals: puffed corn, amaranth, buckwheat, millet or rice, rice flakes
Hot cereals: hominy grits, cream of buckwheat, cream of rice, puffed amaranth, rice flakes, quinoa flakes

Possible Meals:
Regular Beef and Bean Chili

Vaguely middle-eastern Dish:(don’t have a name for it)
Cook quinoa, grill some chicken, soak chickpeas(or use canned)
Combine all 3 main ingredients.
Add in some chopped green onions, paprika, salt and pepper.
Squeeze some lemon juice on top.
