Recently I’ve becoming across a lot of stuff regarding food sensitivities and how it can actually be stressful to the body if induced in large amounts over extended periods of time. So I guess what my question is, how much is too much? The most simplistic example being eggs every morning. I eat those stank infested things religiously!

Yup. Sorry but the only way to find out is to eliminate 1 food at a time for 4 weeks, then reintroduce, and take note of how you feel. I would bet that you do have some sensitivities and or allergies that are holding you back. If I bet everyone and they followed my advice, then I would be a rich man.
Elimination combined with an allergy test (the blood kind which is not common) is the best way to tell.
If there was a set # of eggs you could have per day don’t you think people would already know about it?
