^^ Those last few photos have me dying. All I have for dinner tonight is plain shedded wheat (add honey) in vanilla almond milk. Actually a great combo, but still, would rather one of those meals above… hah. Last night I had a massive chicken quesadilla and chicken tortilla soup. So just cereal is a bit of a downgrade.

I really love prunes… Wish I could eat more of them. Half of a small bag is about as much as I can eat. If I eat a whole bag, I definitely get wrecked. Tried it last week.

My wife is quite happy for me to begin the bulk phase of the t-ransformation challenge, because pasta is her favorite food-group. I’m stoked that I figured out the technique and can roll it out on short notice. I’ll never pay for dried pasta again!

How do you handle the batch size when you make pasta dough? Refrigerate leftovers?

I’ve been making batches that are made with 4 eggs and 3 cups of flour. I cook about half for dinner, and leave the other half, liberally dusted with flour, on a clean plate in a cupboard (just loosely piled, not flattened) to dry. It keeps for weeks to months. It becomes very brittle; just slide the pile into the water when you cook it and the strands will separate.

If you have a “Grand Luxe” nearby, their french toast (Sunday brunch) is worth trying. Easily the most ridiculous desert i’ve had all year. It’s like “air” when you cut into it, but has this custard filling. It’s an enormous serving but goes down fairly easy.

Kielbasa, pork butt roast, mashed potatoes and kraut made with apples in it. Usually eat this on new years, had to wait an extra day because of illness.

Frankensteined two recipes and this “super salad” came out pretty well. Watermelon is the eyebrow raiser but the crunch, sweetness and juiciness really works with the other ingredients.

Eaten with roast chicken (thighs and drumstick for me) - not pictured.

Recipe:

1 avocado
Pumpkin seeds (handful?)
Feta, crumbled
Watermelon, chopped into slices & broken up by hand
Baby spinach 80g, chopped
100g quinoa
Mint and parsley (small handful)
Lime, olive oil & balsamic glaze to dress
Salt & pepper to taste

Today’s salad, I liked it better and it was faster to put together.

Tomato, cut into wedges
Cucumber, wedges
Avocado, slices
Cherry Bocconcini, some whole, some ripped in halves, some ripped smaller
Mint & Basil, diced
Olive oil
Balsamic glaze (I stirred through as dressing then added random globs)
Salt & pepper

Another day, another salad (won’t be another tomorrow :stuck_out_tongue: )

Beets, wedges (I boiled but roast would be amazing)
Cucumber, wedges
Red onions, very thin slices
Bitter salad leaves
Feta, crumbled
Colossal kalamata olives, pitted & halved (don’t buy pitted, it saves about 5 seconds but makes the olives awful)
Parsley
Lemon and olive oil
Baby legumes (chickpea, mung bean, lentil - I forget whatelse)

Are you cutting weight? I remember you mentioned something along those lines in reference to an Efferding seminar (which was awesome, I saw it last week)

I’m still to make a decision on this. I’m currently undoing some of the holiday damage haha

It’s a question of whether I drop weight classes - I’d usually tell people dont but 40 is approaching and carrying 100kegs around at that age isn’t the same as being a youngen. The class under my current one is also highly competitive.
