Todays lunch was spatchcock chicken with mashed taters and brown gravy. With dark chocolate cake for dessert. (Not the cake wasn’t from scratch, just doctored up mix.)

How do you cook your spatchcock chicken? Mine caught fire when I tried it.
I put mine in a cast iron skillet … off the top of my head I think I had the oven at 375 for about an hour … something like that (I have the technique written down but not handy).
Not sure what you did to have it catch fire?? did you put it on an open grille with nothing to catch the grease??

Yes I put it on the grill, but I put it in the middle with the middle burner off (that’s how I read to do it. Mine has three burners so only the two side burners were on. Other than the normal grease catch on the grill, do I need something directly under it on the grate?
I cooked mine in the oven at 400°F for about 50 mins. Stuck the butter under the skin and basted it a couple of times throughout cooking.

Chicken + gas grill =🔥
Put the chicken at one end, turn the other two burners on until it gets good and hot then turn the middle one off and just leave the far burner on.
Or use a metal pan with a rack in it and some water to catch the grease.

Yesterday Grilled chicken and avocado tacos.
Chorizo and eggs with avocado and apple for dessert. Hopefully there won’t be any ill effects from the apple but, ya never know

Church fish sammich with Bolthouse Farms honey mustard dressing.
Not crazy good, but good enough since its only about 50 yds. away.
