LMAO. Bout 2 is literally happening right now as I reply, and I must say, it’s exactly what I expected… going great :smiley:

My body is responding very well to the changes i’ve made in my diet over the last ~3 weeks, feel great. The only thing that wrecked me in recently, was eating ~1kcal of mixed nuts (cashews/almonds/dried cranberries). I kind of knew it would but I had a bag laying around from hurricane prep, so I just crushed it. Compared to fruits/veggies/eggs/chicken, it definitely made me feel tired, weak, slow, bloated etc.

Well this came out ridiculous. Two eggs sunny side up on san fran sour dough, and 2 fried bananas. That bread + egg combo complement each other really well…

Btw I love this thread. It’s actually motivated me to prepare my food a bit more artistically (lol), which has helped me eat even cleaner.

Nice!! But I also just noticed I typed “friend bananas” instead of “fried bananas”… eek. lmfao.

Ya I love making those, so easy. Always comes out great.

FWIW, what I do is put some olive oil in a pan, then sprinkle some salt on it. Then heat it up for a few minutes, drop in the sliced bananas, and cook it for like ~5 minutes or so. I used to try flipping them but, it can get all mushy and wrecked, so I just leave them in the same spot now.

The salt adds an extra kick to it.

Which meal?

Fajita peppers (home grown) and skirt steak. Pic before I threw two corn tortillas, 2 cups of lettuce and veggies in the bowl.

Baking tomatoes with veggies to make soup. After baking blend em up and mix an with home made bone broth.

Halushki. Boneless pork ribs and cabbage. No noodles because “wheat is the devil!”. But tastes awesome none the less.

Came back to this thread a few times & keep looking at the tomatoes … ridiculous. Looks so good. Any photos of the soup? Imagine it’s not as easy for a soup photo to look “good” but whatever.

I used to make an enormous pot of lentil soup ever so often, been wanting to for a while now. FWIW, it has tons of tomatoes in it. Moved it up higher on the TODO-COOKING list because of this photo.

Umm. Well. You already saw the fresh Romas from the garden and as they came out of the oven. So:

Going into the oven:

Pureed after baking:

Grass fed pork bone broth. The pressure cooker makes this stupid simple. Chickens and dogs love the crumbly bones after you make the broth.

It’s soup! Frozen.

Wife’s recipe:
In the broth: water, pork bones, salt pepper.

Slow roast tomatoes in the oven 300F for at least 2 hours. Put in: garden tomatoes (all kinds) cut off all greens and quarter them on a pan. Quarter onions, carrots, garlic, olive oil salt and pepper. When purreeing add fresh basil. Wife used to core/skin tomatoes beforehand but kitchenaid made that step unnecessary. Can add honey to cut the bitterness if you want, one tablespoon per stockport works for us.

Mix tomato purree and broth to suit your preference for thickness. Then freeze for later. Or eat now. We just had an obscene amount of tomatoes for us and didn’t want to can them all. Ran out of canning jars with green beans.

This meal sits VERY WELL in my stomach. Feel great after eating it, and usually feel great all day plus the next day.

Ya man they are solid. Never once have I been unsatisfied by the food. 8| They have big warnings over the oven that state the food may be a bit charred & that’s how they do it because of the coal fired oven, so don’t complain. lmao.

Just a small lunch ~3 hours before a long run: toasted spent grain hearth bread, avocados (2), banana, a block of aged gouda, and some coconut water.
