I’m looking at purchasing farmers handles from local welder, but want/need them to be as compact as possible. I thought of 200 mm sleeves, but what’s the minimal distance between the plates I need for comfortable walking?

A little more than the length of your stride. You don’t want to be kicking the plates as you are running/walking. I’ve used handles like that and it throws you off big time when your back foot kicks the rear plates.
