I'm closing fast on 3 weeks from the Arctic Pro 212 in Anchorage, Alaska. Often times the hardest part of my diet is at night during dinner time. Thankfully life is so hectic that I don't have much spare time to dwell on feeling hungry. The worst is waking up at night feeling hungry. I've been making the following for dinner that is amazing. Totally satiating, 55 grams of protein, 10 grams of carbs (6 fiber) and 5 grams of fat.
Here's the ingredients:
1/2 tablespoon of coconut oil
1/2 cup of riced cauliflower from Trader Joe's
1 package of Miracle Rice Noodles
7oz ground turkey breast (I buy pre-made patties from Elite Lifestyle Cuisine "Flex Burger")
1/2 cut of fermented pickled vegetables by Pickled Planet (jalapenos, onions, carrot, daikon radish)
2 large leaf kale
Sprinkle cayenne pepper
Sprinkle sesame seeds
Sea Salt (Redmond's Real Salt)
Cook up in a large skillet in about 10 minutes max.
