Different Reaction to Carbs After Low Carbing?

After one has been on a low carb diet (30-60 g daily) for about 2 weeks, does the body react differently to carbs one you eat a large amount (400-500g)? If I eat a large amount of carbs for 2-3 days in a row my skin acts up (pimples). However, if I eat low carb for a while and then have a day where I eat a lot of carbs I have no negative effects. So, I was wondering if carbs are treating differently when ingested after a time of low carb eating.
