Diet Calculations & Guide

How do you guys keep track of what you are eating daily? Do you just write it down and add up the Cal/Carbs, protein, etc. by hand? Or do you use a program on the computer? Also, what do you use as a guide for amounts of carbs/cal,etc for each piece of food?
