Cutting Up Assistance!!!

i started out a fat fuck i bulked up now i am 190 im 5’8 20 years old.i need to cut up fast.need some abs.doing the workouts. dieting. on cardio a must?what time should i stop eating.i get alot of the night hungers and just start mosly fruits chicken vegetabls and carbs in the morning.what should i be doing to get my body defined and abs?also instead of 3 sets of twelve or 5 sets 15,12,10,8, cut up what should my sets be and how many reps?
