Cooking for the Lunch Box Types

#1

Wanted to try to make thread devoted to us old school folks who still pack a lunch box, can't really cook and don't have time to make anything nice to lug to work. If you're like me you eat several meals at work and those staples can get real old.

The idea is recipies that can be premade, frozen and then eaten throughout the week. Honestly we can go any direction just wanted to give others ideas for new food to take to work. Food porn is always welcome.

If you haven't seen this before there is a thread in the Tcell about alpha cooking:

This is cool but for the most part these folks can actually cook, props to SteelyD he's the Gordon Ramsey of T-Nation but my skills are lost after burning some chicken.

Stir altogether in bowl till somewhat smooth. Put in a 6x9 pan with anti-stick cooking spray.

Cut into 6 bars . Good to go.

My wife likes hers with a little strawberry jam or butter on it.

Soak 1 lb red beans in water over night.

Put in crockpot with two lbs sausage cut into chunks along with one half pound pork trimmings.

Cook all day on low setting. Divide into containers that night.

Some great suggestions guys. Going to try all of them, I really need something new to eat.

Here is one I haven't done for sometime but think I will.

Season thawed chicken breast with salt and pepper
Bake chicken breast @ 350 for about 35-45 min
drizzle with honey about half way through the baking process
toward the end add a cooked strip of bacon and cover with cheese until melted.

Package and freeze.

Ok
Regular work fridge set up.
Tend to do this at the beginning of a set of shifts.
1 pack of cooked chicken drumsticks
Pots of low fat and pineapple added cottage cheese.
Tub of creme fraiche
Pots of whole earth peanut butter.
Pot of set honey.
Salad dressings.

Add to that each day :
Tub of made up chunky salad contains
Broccoli just blanched.
Green beans same.
Fried off red pepper
Baby tomatoes
Spring onion.

Also if made up
Home made new potato salad. :
Bring to boil and simmer any quantity of waxy new potatoes.
Cool and slice chunky
Add chopped spring onion, good quality mayo and shavings off proper hard parmesan.
Add black pepper to taste.

For a complete meal i can just tear up some chicken drumstick meat and add to the potato salad.
Walnuts.
