Contest Diet

I can't seem to find this, but can someone explain to me how most people taper their diet as a contest approaches. I'm mainly concerned about the final 3-4 weeks such as water depletion and carb load, etc. and why? For sake of simplicity let's assume I've dieted to around 8-9%bf and just want to know where to go from there. Thanks.
