composition

I would like to know the types of carbohydrates I am eating. I know that table sugar, sucrose, is a dimer made up of 1 fructose and 1 glucose. Lactose is also a dimer, 1 glucose and one something else I can’t recall. But I know nothing about things like white flour, oat meal, carrots, etc. Does cooking these things change the glycemic index? What is in them? If I knew then I would be better able to understand what effects they might have on my metabolism. Does anyone know a source for this kind of detailed information? All I can find is stuff that says % carbohydrate, I want to know what kind of carbohydrate.
