I am having a problem finding anything definitive on this website or on the internet. I love onions but in order to avoid and upset stomach I need to cook them somehow. What I am wondering is if Caramelizing onions or other foods in olive oil is still healthy or if there is some chemical reaction that occurs which changes the nutritional value of the foods when caramelized.

But you probably have an allergy.
So don’t eat that shit.
You have to cook onions pretty long and at a pretty high heat to caramelize them, so just cut down on the cooking time.
It’s also not recommended to cook at high heats with olive oil as it turns carcinogenic.
