Does anyone know if the oil in canned fish is o.k? I use canned salmon, but the cans aren’t refrigerated in the shop. Wouldn’t the omega 3 oils go rancid?

Do you know the breakdown of Omega-3’s (EPA & DHA) in sardines (canned)? Are sardines a more concentrated source of EPA & DHA than salmon?
