rather than tapering down from a 3rm-2rm-1rm across 3 weeks, would a 5rm-4rm-3rm approach offer more growth? Or does it detract too much from the method?
It would likely give you more size, yes. But not as much strength and might tired you out too much. Honestly I haven't tried it so I can't make definite comments about if it would work or not. My gut feeling is that it would work well for size and overall strength, but not so much as a maximum strength plan, which is the goal of the original program.
