If you’ve never tried broccoli slaw for your vegetables – you should give it a try. It is sold at my super market with the pre-packaged lettuce/spinach/etc. I generally don’t like broccoli – but I tolerate it better shredded as it is easier to control the portion size. Here’s lunch:
1/4 cup broccoli slaw (shredded broccoli, cabbage, and carrots)
1/2 cup fresh chopped spinach
1/2 cup lettuce (romain)
1/4 cup cheese
1/4 cup cottage cheese
Then I pan fried the following and it goes on top:
4 oz steak (ribeye)
4 oz black beans
4 oz tomatoes (rotel tomatoes for spice)
1/2 green pepper
Red wine vinegar to taste.
