Big Batch, Tasty, Cheap Bulk Recipes

I thought I’d share this recipe I came up with after raiding my pantry. It’s easy to make a large batch and tastes delicious, especially as leftovers. I haven’t really thought of a name for it.


approx 12 large Chicken tenderloins (or a few breasts) BJ’s sells huge bags cheap
2 boil in bags brown rice
1 can black beans
1 can pinto beans
1 can garbanzo beans
2 cans stewed tomatoes
1 can chicken broth
1 large or 2 small cans mushrooms
garlic powder, onion powder, salt, pepper (or whatever seasonings you want)

sautee the chicken in bite size pieces in olive oil in a pan
add chicken and all other ingredients (discard juice from one of the cans of tomatoes)
to a large pot and bring to a boil. Simmer on medium low for 20 mins ish (i didn’t time it)to reduce some of the liquid. Season to taste.

There you have it. It was cheap, good, and easy…and I got a lot of it.

I usually just cook my meat in bulk and use different dressings to flavor it.

Avocado dressing from Shugart:

2 avocados, 2 tablespoons of lemon juice, add olive oil/salt/pepper to your taste. Blend it all together. However, it goes moldy in about 4-5 days, so make small portions at a time.

Delicious tomato dressing from my english teacher, he used to be a chef:

Cherry tomatos, garlic, fresh thyme (the difference between fresh and dried is immense, so use FRESH).

  1. Fry chopped up garlic in olive oil until you smell the aroma
  2. Add in cherry tomatoes and thyme
  3. You’d be surprised how tasty it is

Mini pepper paste:

  1. buy a bottle of pickled pepper rings
  2. Drain most of the liquid out, leave just a bit
  3. Add olive oil or avocado oil and blend it
    Obviously, how paste or liquid like is dependent on how much liquid you add.
