I hate tuna fish. I think it smells nasty. I will refrain making from the obvious joke. However, I had tuna salad the other night that was awesome. So I will share. It was at a healthfood restaurant and they called it Mediterranean Tuna Salad. I think I have duplicated it here:
4 sun-dried tomatoes chopped
1/4 red onion minced
1 (12oz) can of solid white albacore tuna packed in water drained
1 rib celery chopped
1/4 cup pitted nicoise olives whole or halved
1 tablespoon capers rinsed
2 tablespoons extra-virgin olive oil
Juice of 1/2 lemon
1 teaspoon lemon zest
2 tablespoons fresh oregano chopped
1 clove garlic minced
Kosher salt & black pepper to taste
Soak the tomatoes in hot water for 20 minutes until soft and then drain and chop. Mix all above ingrediants in a bowl and chill. Serve on your choice of greens (spinach, romaine, etc.) and depending on your nutrional goals toss in some artichoke hearts, hearts of palm a few halves of hardboiled egg, crumbled feta cheese, chopped chive or green onion and drizzle with a little olive oil and lemon juice.
