I’ve started doing ab wheel rollouts for only about 2 sets, 4-5 times a week. Is this too much? Opinions?
If you are recovering then it’s not too much.

More info needed.
Goal? Total volume (sets and reps)? Intensity/how close to failure is each set? Additional ab/core work?
Short answer: It’s very unlikely that doing one high frequency/very low volume ab exercise is “too much”. Possible, but unlikely.
